How Are Boston Baked Beans Made?

Despite the name, Boston Baked Beans aren't beans at all—and they aren't even from Boston! These iconic candies are actually sugar-coated peanuts that were created in Chicago in 1924 by Salvatore Ferrara. Inspired by the European tradition of "panning" (the same process used to make Jordan almonds), Ferrara used a technique called cold-panning to build up a crunchy, deep-red shell around a Spanish peanut. The candy was named "Boston Baked Beans" as a clever marketing nod to the city's famous molasses-based dish, which the candy shares a striking resemblance to in both color and shape. It was a brilliant way to make a simple peanut confection feel like an "all-American" classic, and it remains one of the few nut-based candies still made using that traditional, slow-turning process today.
